  • Salt and pepper to taste

Spaghetti Squash Lasagna

Instructions

  1. Preheat your oven to 400 degrees F.
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Brush the inside of each half with olive oil and sprinkle with salt and pepper.
  4. Place the squash halves cut-side down on a baking sheet and bake for 30-40 minutes, or until the flesh is tender and easily pierced with a fork.
  5. While the squash is cooking, heat the olive oil in a large skillet over medium-high heat.
  6. Add the ground meat, onion, and garlic to the skillet and cook until the meat is browned and the onion is translucent.
  7. Stir in the pasta sauce and Italian seasoning and bring the mixture to a simmer.
  8. Reduce the heat to low and let the sauce simmer for 10-15 minutes.
  9. When the squash is done, use a fork to scrape the flesh into a large bowl.
  10. Stir the cottage cheese into the spaghetti squash.
  11. In a separate bowl, combine the mozzarella and Parmesan cheese.
  12. Spread half of the squash mixture into the bottom of a 9x13 inch baking dish.
  13. Top with half of the meat sauce.
  14. Sprinkle half of the cheese mixture over the meat sauce.
  15. Repeat the layers, starting with the remaining squash mixture and ending with the remaining cheese mixture.
  16. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  17. Let the lasagna cool for a few minutes before slicing and serving.
