Copycat Old Spaghetti Factory Minestrone Soup

Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 stalks celery, diced
- 2 carrots, diced
- 1 zucchini, diced
- 1 yellow squash, diced
- 1 can kidney beans, drained and rinsed
- 1 can garbanzo beans, drained and rinsed
- 1 can diced tomatoes
- 1 can tomato sauce
- 4 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 cup small pasta (such as ditalini or elbow macaroni)
- Salt and pepper to taste
Directions:
- Heat olive oil in a large pot over medium heat. Add onions and garlic and sauté until soft, about 5 minutes.
- Add celery, carrots, zucchini, and yellow squash and sauté for an additional 5 minutes.
- Add kidney beans, garbanzo beans, diced tomatoes, tomato sauce, vegetable broth, basil, oregano, thyme, and bay leaf to the pot. Bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Add pasta and continue to simmer until pasta is cooked, about 10 minutes.
- Season with salt and pepper to taste.
- Remove bay leaf before serving.
