If you’ve ever visited the Old Spaghetti Factory, you know that their minestrone soup is a crowd favorite. The soup is packed with vegetables, beans, and pasta, making it a hearty and nutritious meal. But what if you could make this delicious soup at home? With this copycat recipe, you can!

Ingredients:

Vegetables
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 stalks celery, diced
  • 2 carrots, diced
  • 1 zucchini, diced
  • 1 yellow squash, diced
  • 1 can kidney beans, drained and rinsed
  • 1 can garbanzo beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 cup small pasta (such as ditalini or elbow macaroni)
  • Salt and pepper to taste

Directions:

Cooking
  1. Heat olive oil in a large pot over medium heat. Add onions and garlic and sauté until soft, about 5 minutes.
  2. Add celery, carrots, zucchini, and yellow squash and sauté for an additional 5 minutes.
  3. Add kidney beans, garbanzo beans, diced tomatoes, tomato sauce, vegetable broth, basil, oregano, thyme, and bay leaf to the pot. Bring to a boil.
  4. Reduce heat and simmer for 30 minutes.
  5. Add pasta and continue to simmer until pasta is cooked, about 10 minutes.
  6. Season with salt and pepper to taste.
  7. Remove bay leaf before serving.
