Southwestern Stuffed Spaghetti Squash With Black Beans
Spaghetti squash is a versatile vegetable that can be used in many different recipes. One of our favorites is this Southwestern stuffed spaghetti squash with black beans. It's a healthy and delicious meal that's perfect for any night of the week.
Ingredients:
- 2 medium spaghetti squash
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 jalapeño pepper, seeded and diced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1/4 cup chopped fresh cilantro
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F (190°C).
- Cut the spaghetti squash in half lengthwise and remove the seeds and fibers.
- Brush the inside of each half with olive oil and sprinkle with salt and pepper.
- Place the squash halves, cut side down, on a baking sheet and bake for 35-40 minutes, or until tender.
- While the squash is baking, heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Add the red bell pepper, jalapeño pepper, cumin, chili powder, and smoked paprika to the skillet and cook for another 5 minutes, stirring occasionally.
- Add the black beans and corn to the skillet and cook for another 5 minutes, or until the beans and corn are heated through.
- Remove the skillet from heat and stir in the cilantro.
- Once the spaghetti squash is done baking, remove it from the oven and let it cool for a few minutes.
- Using a fork, scrape the inside of each squash half to create spaghetti-like strands.
- Spoon the black bean mixture into each squash half and top with shredded cheddar cheese.
- Place the squash halves back on the baking sheet and bake for another 10 minutes, or until the cheese is melted and bubbly.
- Serve hot and enjoy!
