Spaghetti Squash With Black Beans

Spaghetti squash is a versatile vegetable that can be used in many different recipes. One of our favorites is this Southwestern stuffed spaghetti squash with black beans. It's a healthy and delicious meal that's perfect for any night of the week.

Ingredients:

  • 2 medium spaghetti squash
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeño pepper, seeded and diced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the spaghetti squash in half lengthwise and remove the seeds and fibers.
  3. Brush the inside of each half with olive oil and sprinkle with salt and pepper.
  4. Place the squash halves, cut side down, on a baking sheet and bake for 35-40 minutes, or until tender.
  5. While the squash is baking, heat the olive oil in a large skillet over medium heat.
  6. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  7. Add the red bell pepper, jalapeño pepper, cumin, chili powder, and smoked paprika to the skillet and cook for another 5 minutes, stirring occasionally.
  8. Add the black beans and corn to the skillet and cook for another 5 minutes, or until the beans and corn are heated through.
  9. Remove the skillet from heat and stir in the cilantro.
  10. Once the spaghetti squash is done baking, remove it from the oven and let it cool for a few minutes.
  11. Using a fork, scrape the inside of each squash half to create spaghetti-like strands.
  12. Spoon the black bean mixture into each squash half and top with shredded cheddar cheese.
  13. Place the squash halves back on the baking sheet and bake for another 10 minutes, or until the cheese is melted and bubbly.
  14. Serve hot and enjoy!
