What is a Keto Diet?

Keto Diet

A keto or ketogenic diet is a low-carb, high-fat diet that has been shown to help with weight loss, improve blood sugar control, and reduce the risk of several diseases. The goal of a keto diet is to get your body into a state of ketosis, where it burns fat for fuel instead of carbohydrates.

What is Beef Stroganoff?

Beef Stroganoff

Beef stroganoff is a classic Russian dish made with strips of beef, mushrooms, and sour cream sauce. It's usually served over egg noodles, but we're going to substitute spaghetti squash for a low-carb, keto-friendly version.

Ingredients

Keto Beef Stroganoff
  • 1 spaghetti squash
  • 1 pound of beef sirloin, sliced into thin strips
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 8 ounces of mushrooms, sliced
  • 1 cup of beef broth
  • 1/2 cup of sour cream
  • 2 tablespoons of olive oil
  • 1 tablespoon of paprika
  • 1 tablespoon of Worcestershire sauce
  • Salt and pepper to taste

Instructions

Keto Beef Stroganoff
  1. Preheat your oven to 375°F.
  2. Cut the spaghetti squash in half lengthwise and remove the seeds. Place the halves face down on a baking sheet and bake for 30-40 minutes, or until the flesh is tender.
  3. While the spaghetti squash is baking, heat the olive oil in a large skillet over medium-high heat. Add the beef and cook for 3-4 minutes on each side, or until browned. Remove the beef from the skillet and set aside.
  4. Add the onion and garlic to the skillet and cook until the onion is translucent, about 5 minutes.
  5. Add the mushrooms and cook until they release their moisture and start to brown, about 5-7 minutes.
  6. Add the beef broth, paprika, Worcestershire sauce, salt, and pepper to the skillet. Bring to a simmer and cook for 5 minutes.
  7. Stir in the sour cream and return the beef to the skillet. Cook for 2-3 minutes, or until the sauce is thick and creamy.
  8. Use a fork to scrape the spaghetti squash flesh into strands. Serve the beef stroganoff over the spaghetti squash.

Why is this Recipe Keto-Friendly?

Keto Diet

This recipe is keto-friendly because it uses spaghetti squash instead of egg noodles, which are high in carbohydrates. Spaghetti squash is low in carbs and high in fiber, making it a great substitute for pasta. The beef stroganoff sauce is also keto-friendly, as it's made with sour cream instead of heavy cream or flour-based thickeners.
