Ingredients:

  • 1 medium-sized spaghetti squash
  • 6 slices of bacon, chopped
  • 1 cup of canned full-fat coconut milk
  • 2 cloves of garlic, minced
  • 2 tablespoons of nutritional yeast
  • 1 tablespoon of arrowroot powder
  • 1 tablespoon of ghee
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F.
  2. Cut the spaghetti squash in half and scoop out the seeds.
  3. Place the squash halves cut-side down on a baking sheet and bake for 35-40 minutes or until tender.
  4. While the squash is baking, cook the chopped bacon in a large skillet over medium heat until crispy. Remove the bacon from the skillet and set aside.
  5. Add the minced garlic to the skillet with the bacon grease and sauté for 1-2 minutes.
  6. Whisk together the coconut milk, nutritional yeast, arrowroot powder, ghee, salt, and pepper in a small bowl until well combined.
  7. Once the garlic has cooked, add the coconut milk mixture to the skillet and stir to combine.
  8. Bring the mixture to a simmer and cook for 3-4 minutes or until the sauce has thickened.
  9. Use a fork to scrape the inside of the spaghetti squash into spaghetti-like strands.
  10. Place the spaghetti squash strands into the skillet with the sauce and toss to combine.
  11. Add the cooked bacon back to the skillet and stir to combine.
  12. Cook for an additional 1-2 minutes or until the bacon is heated through.
  13. Remove from heat and serve hot.
