Baked Spaghetti Squash With Tomato Meat Sauce

Ingredients

For the spaghetti squash:

  • 1 medium spaghetti squash
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt

  • 1 pound ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes

Step 1: Prepare the Spaghetti Squash

Preheat the oven to 375°F. Cut the spaghetti squash in half lengthwise and remove the seeds with a spoon. Brush the inside of each half with olive oil and sprinkle with salt and pepper. Place the squash cut side down on a baking sheet and bake for 35-45 minutes or until the squash is tender.

Step 2: Prepare the Tomato Meat Sauce

In a large skillet, brown the ground beef over medium heat. Drain any excess fat. Add the onion and garlic to the skillet and cook until the onion is translucent. Add the crushed tomatoes, tomato paste, basil, oregano, salt, black pepper, and red pepper flakes. Stir to combine and let the sauce simmer on low heat for 15-20 minutes.

Once the spaghetti squash is cooked, remove it from the oven and let it cool for a few minutes. Using a fork, scrape the inside of each half of the squash to create spaghetti-like strands.
