- 1 large spaghetti squash

- 1 lb. ground turkey

- 1/2 onion, chopped

- 2 cloves garlic, minced

- 1 jar of your favorite marinara sauce

- 1 cup part-skim ricotta cheese

- 1/4 cup grated Parmesan cheese

- 1 cup shredded part-skim mozzarella cheese

- Salt and pepper to taste

Instructions:

1. Preheat your oven to 375 degrees F.

2. Cut your spaghetti squash in half lengthwise and remove the seeds. Spray the inside of each half with olive oil cooking spray and season with salt and pepper. Place the halves on a baking sheet, cut side down, and bake for 35-40 minutes or until the squash is tender.

3. While the squash is cooking, brown the ground turkey in a large skillet over medium-high heat. Add the onion and garlic and cook for 2-3 minutes or until the onion is soft.

5. In a small bowl, combine the ricotta cheese and Parmesan cheese.

6. Once the squash is done cooking, remove it from the oven and let it cool for a few minutes. Use a fork to scrape the inside of each squash half to create "spaghetti" strands.

8. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
