Ingredients For Chicken Alfredo Spaghetti Squash Boats

Instructions:

  1. Preheat your oven to 400 degrees F.
  2. Cut your spaghetti squash in half lengthwise and scoop out the seeds and pulp. Brush the inside of each half with olive oil and season with salt and pepper. Place the halves cut side down on a baking sheet and bake for 30-40 minutes, until the squash is tender.
  3. While the squash is baking, heat a large skillet over medium-high heat. Add the chicken and season with salt and pepper. Cook for 5-7 minutes, until browned on all sides and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add a bit more olive oil if needed and sauté the garlic for 1-2 minutes, until fragrant.
  5. Add the chicken broth to the skillet and stir to scrape up any browned bits from the bottom of the pan. Bring the broth to a simmer and cook for 2-3 minutes.
  6. Add the heavy cream and Parmesan cheese to the skillet and stir to combine. Cook for another 2-3 minutes, until the sauce has thickened slightly.
  7. Stir in the chopped basil and cooked chicken. Taste and adjust the seasoning as needed.
  8. Once the squash is done baking, remove it from the oven and let it cool for a few minutes. Use a fork to scrape the flesh of the squash into spaghetti-like strands.
  9. Divide the chicken alfredo mixture evenly among the four squash halves. Return the squash boats to the oven and bake for another 10-15 minutes, until heated through and slightly browned on top.
  10. Remove from the oven and serve immediately.
