Ingredients:

  • 1 large spaghetti squash
  • 1 pound of Italian sausage

  • 2 cloves of garlic, minced

  • 1 yellow bell pepper, diced
  • 1 cup of sliced mushrooms
  • 1 can of diced tomatoes
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • Salt and pepper, to taste
  • Parmesan cheese, for serving

Instructions:

  1. Preheat your oven to 375 degrees F.
  2. Cut the spaghetti squash in half lengthwise and remove the seeds. Place the halves cut-side down on a baking sheet and bake for 30-40 minutes, or until the squash is tender and can be easily pierced with a fork.
  3. While the squash is baking, cook the Italian sausage in a large skillet over medium-high heat until browned and cooked through, breaking it up into small pieces as it cooks. Remove the sausage from the skillet and set it aside.
  4. Add the diced onion, minced garlic, red bell pepper, yellow bell pepper, and sliced mushrooms to the same skillet you used to cook the sausage. Cook the vegetables over medium-high heat until they are tender and lightly browned, about 10 minutes.
  5. Add the can of diced tomatoes (undrained), dried oregano, dried basil, salt, and pepper to the skillet with the vegetables. Stir to combine and let the mixture simmer for 5-10 minutes.
  6. When the spaghetti squash is done baking, use a fork to scrape the flesh into long strands. Add the spaghetti squash strands to the skillet with the sausage and vegetables. Toss everything together until the spaghetti squash is coated in the sauce and heated through.
  7. Serve the spaghetti squash and sausage hot, topped with Parmesan cheese if desired.
