Low Carb Spaghetti Squash Lasagna Recipe

Are you on a low carb diet and craving some comfort food? Look no further than this delicious low carb spaghetti squash lasagna recipe! Not only is it a healthier alternative to traditional lasagna, but it's also easy to make and packed with flavor.

Ingredients:

  • 1 medium spaghetti squash
  • 1 pound ground beef
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F. Cut the spaghetti squash in half lengthwise and remove the seeds. Place the halves cut-side down on a baking sheet and bake for 45 minutes or until tender.
  2. While the spaghetti squash is baking, heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook until translucent, about 5 minutes. Add the ground beef and cook until browned, breaking it up with a spatula as it cooks.
  3. Add the crushed tomatoes, basil, oregano, salt, and pepper to the skillet and stir to combine. Reduce the heat to low and let simmer for 10 minutes.
  4. In a medium bowl, combine the ricotta cheese, egg, and parsley.
  5. Once the spaghetti squash is done baking, remove it from the oven and let it cool for a few minutes. Use a fork to scrape out the strands of squash and transfer them to a bowl.
  6. To assemble the lasagna, spread a layer of the meat sauce on the bottom of a baking dish. Add a layer of spaghetti squash on top, followed by a layer of the ricotta mixture. Repeat these layers until all the ingredients are used up, ending with a layer of meat sauce on top.
  7. Sprinkle the shredded mozzarella and grated Parmesan cheese on top of the lasagna.
  8. Bake for 30 minutes or until the cheese is melted and bubbly.
  9. Let cool for a few minutes before serving.
