Low Carb Spaghetti Squash Lasagna Recipe

Ingredients:
- 1 medium spaghetti squash
- 1 pound ground beef
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1/4 cup chopped fresh parsley
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F. Cut the spaghetti squash in half lengthwise and remove the seeds. Place the halves cut-side down on a baking sheet and bake for 45 minutes or until tender.
- While the spaghetti squash is baking, heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook until translucent, about 5 minutes. Add the ground beef and cook until browned, breaking it up with a spatula as it cooks.
- Add the crushed tomatoes, basil, oregano, salt, and pepper to the skillet and stir to combine. Reduce the heat to low and let simmer for 10 minutes.
- In a medium bowl, combine the ricotta cheese, egg, and parsley.
- Once the spaghetti squash is done baking, remove it from the oven and let it cool for a few minutes. Use a fork to scrape out the strands of squash and transfer them to a bowl.
- To assemble the lasagna, spread a layer of the meat sauce on the bottom of a baking dish. Add a layer of spaghetti squash on top, followed by a layer of the ricotta mixture. Repeat these layers until all the ingredients are used up, ending with a layer of meat sauce on top.
- Sprinkle the shredded mozzarella and grated Parmesan cheese on top of the lasagna.
- Bake for 30 minutes or until the cheese is melted and bubbly.
- Let cool for a few minutes before serving.
